Rosella Vine Ripened Tomato Soup with Dukkah Croutons
- 1 x 500g can Rosella Vine Ripened Tomato Soup
- 4 tablespoons olive oil
- 1 clove of garlic crushed
- Salt and freshly ground black pepper
- 2 slices of good quality sourdough white bread
- 2 tablespoons dukkah mix
- Sour cream to serve
Heat the soup following instructions.
Preheat your grill or a sandwich press to medium high. To make the croutons, mix the oil, crushed garlic, salt and pepper in a small bowl, then brush both sides of the bread with the mix. Toast the bread on both sides until golden and crisp, then sprinkle generously with dukkah.
To serve, swirl in a little sour cream and a sprinkle of dukkah on top. Add the croutons on the side.
