Meatball Subs
Makes: 4 | Prep: 15 minutes | Cook: 20 minutes | Difficulty: Easy
Ingredients
- 3/4 cup fresh breadcrumbs
- 2 tbs milk
- 600g beef mince
- 1 clove garlic, crushed
- 1 tbs thyme leaves, plus a few extra sprigs
- 1 1/2 cups Rosella Tomato Sauce
- 1 cup beef stock
- 2 extra cloves garlic, crushed
- 4 long bread rolls
- Mozzarella cheese

METHOD:
Step 1
Combine the breadcrumbs and milk in a large bowl. Stir and allow to sit for one minute. Then add the beef mince, thyme and a pinch of salt and pepper. Stir until well combined.
Step 2
Line a tray with non-stick baking paper. Roll 1tbs of beef mince into a ball, place on a tray, and repeat until all the beef mixture has gone.
Step 3
Place a large non-stick frying pan over medium heat. Add the tomato sauce, stock, garlic and a couple of sprigs of thyme to the saucepan and bring to a simmer.
Step 4
Slide in the meatballs and cook for 6 minutes or until cooked through, then turn off the heat.
Step 5
Heat an oven grill to high. Cut rolls 3/4 of the way through lengthways, then place on an oven tray.
Add meatballs to each sub then sprinkle with mozzarella cheese. Place under the grill on high for 2 minutes until the cheese has melted
