Sweet Corn Pancakes with Smoked Salmon & Cream Cheese

Rosella Sweetcorn Pancakes

Ingredients

  • 1 cup plain flour
  • 1 cup self-raising flour
  • 2 eggs
  • 1 & 1/4 cup milk
  • 3/4 cup Rosella Condensed Sweet Corn Soup
  • Butter (for frying)
  • Smoked salmon, cream cheese and dill, to serve

METHOD:

1. In a bowl, whisk together the eggs, milk and Rosella Condensed Sweet Corn Soup until smooth and well combined.

2. In a larger bowl, mix the plain and self-raising flours. Create a well in the centre, then slowly pour in the wet ingredients and stir to combine.

3. Heat a large non-stick frying pan over medium heat and add a small amount of butter to grease the pan. Once hot, spoon about a tablespoon of batter for each pancake.

Cook for 1-2 minutes or until small bubbles appear on the surface. Flip the pancake and cook for another 1-2 minutes until golden brown and cooked through.

4. Continue cooking the remaining pancakes in batches, adding more butter to the pan as necessary.

5. Serve the pancakes with a dollop of cream cheese, a slice of smoked salmon and a sprig of fresh dill.
